Rooted in a background in fine dining, our approach is guided by restraint, precision, and an unwavering respect for ingredient-led craft. We focus exclusively on Neapolitan pizza dough — elevated through time, technique, and the integrity of what goes into it.

We use carefully sourced Italian “00” flour, pure water, sea salt, and a considered fermentation culture. Nothing more, nothing unnecessary. Each batch is given time to develop slowly, allowing natural fermentation to build structure, depth, and complexity in flavour. The result is a dough that is light, elastic, and beautifully nuanced — defined by patience rather than intervention.
